The different elements making up the cassata, pose more than one challenge. But, as the saying goes: the more challenging, the more satisfying .
Vegan ricotta centre is made with pure almonds and cashews, studded with raw cacao nibs and home-dehydrated candied orange. A soft vanilla sponge surrounding the filling is made with gluten free ingredients. All of it is encased in an almond marzipan, naturally coloured with spirulina and matcha green tea.
Nothing sweeter than good results! the satisfaction and sense of achievement in providing new products and setting new standards is immense, albeit worth nothing if not shared.
